easy sunday morning breakfast.


I hate to admit it....but most of our meals do not consist of us sitting down together as a family. Schedules and lack of time just doesn't always permit it.

But Sunday morning breakfast is a pretty consistent meal in which we eat together. And because I do miss out on so many breakfasts with Parker...I like to makes something 'special.' Something we don't eat everyday.

Most of the time I make pancakes or waffles. They're a favorite of hers. But lately I've been in a kick to try something new. It makes me feel like I've done something even more 'special' for her.

So last week I made these French Toast Bites that I found from Tasty Kitchen. They were so easy and fast to make. Plus, it helped me to get rid of some bread and eggs that were about to be expired.

But this week I decided to make Bakerella's mini maple pancake muffins. They look so cute on her site. And well...they have milk chocolate in them. And I can't seem to get enough of that stuff these days, unfortunately.

(I'm hoping that this chocolate craving will go away once this baby gets here! Yikes! Seriously......Geoff threatened to stop stocking up our Halloween candy for the trick-or-treaters because I keep eating it all. Oops.).

It seriously took me about 10 minutes (maybe a little less) to get all of the ingredients out and mixed up....then baked them for 9 minutes. So in about 20 minutes...we had something new and good for breakfast!


And because I figured that my husband would not like the ones that had chocolate chips in them (I know. Weird.) because they might be "too sweet"....I made some without. And of course....he told me thank you...and he did try the ones with the chocolate chips and he did not like them "at all." But he did like the ones without.

But this little girl. She liked them with the chocolate chips. Just like her Momma. :)


So much, in fact, that by the time she got to her second muffin...she decided to skip the mufffin part altogether and just go for the chocolate chips. Then she'd say she was ready for "a-nudder one."


We even used the real deal maple syrup. It's different than the "regular" syrup we buy....which I figured. But I honestly can't remember having the real maple syrup before. It complimented the muffins well. Although- we did say that maybe next time I'll make some bacon, too....add a little salty in with all of this sweetness.


And my dear, sweet husband made breakfast even better by insisting that he go get me a decaff caramel macchiato. I didn't put up much of a fight. :)
It was a good Sunday morning together as a family.



We made a pretty good dent in those muffins, as well.

And ate them Monday morning, too!
